Deba Damascus kitchen knife with 33 layers by Shizu Hamono Co Ltd, Seki City, Gifu Japan. Blade is made of AUS8 and SUS1A-1, which keep the edge sharp longer. Handle is made of laminated wood and is specially designed to fit in a hand.
The Deba is a traditional Japanese knife for breaking down and filleting fish (although many people also use it for poultry). It has a deep blade with a thick spine tapering to a very fine blade edge and is only sharpened on one side which allows it to be extremely sharp.
Please note most single bevel Japanese knives are designed to be used in the right hand. Left handed bevels are quite rare.
