Damascus kitchen knife with 33 layers by Shizu Hamono Co Ltd, Seki City, Gifu Japan. Blade is made of AUS8 and SUS1A-1, which keep the edge sharp longer. Handle is made of laminated wood and is specially designed to fit in a hand.
Yanagiba is a Japanese fish slicing knife and is also called a Sashimi knife. Yanagi is ‘Willow’ in Japanese and is named after the shape of the blade which is similar to a willow leaf.
The long narrow blade which is only sharpened on one side is designed to slice fish in a single pulling stroke to get the cleanest smoothest cut.
Please note most single bevel Japanese knives are designed to be used in the right hand. Left handed bevels are quite rare.
