These knives are hand-forged by master blacksmith, Shigeki Tanaka using VG 10 (V Gold 10) steel. The beautiful damascus finish is made from 8 layers of steel which give a unique pattern to each knife.
The razor sharp blade is thinner than your average kitchen knife for easier slicing but should not be used for cutting through bone or frozen food in order to prevent chipping. If treated correctly this blade will take a very fine cutting edge and yield many years of service.
Wash immediately after use and towel dry. As with all quality knives, we advise against putting in the dishwasher. To prolong the sharp edge store your knife in a sheath, knife block or magnetic knife rail as opposed to loose in a drawer where the edge may be dulled by coming into contact with other utensils.
